You Asked For It: Good Morning Granola Recipe

Many of our guests have requested our recipe for Good Morning Granola. Although it is featured in our Fox Manor cookbook and also in Cider Beans, Wild Greens, and Dandelion Jelly: Recipes from Southern Appalachia, here is the very easy, very delicious way to make it:

Yield: 8 cups
5 cups old fashioned rolled oats
1 cup coarsley chopped walnuts or pecans (we prefer walnuts)
½ cup packed brown sugar
1 ½ teaspoons ground cinnamon
½ teaspoon freshly grated nutmeg
1/3 cup real Canadian maple syrup
1 cup melted butter
½ cup golden raisins**

Preheat oven to 350° In large bowl, stir together oats, nuts, brown sugar, and spices. Mix maple syrup with melted butter and heat gently. Pour this over oat mixture and mix well.

Spread mix into buttered 10 x 15 inch baking pan. Bake until golden brown, about 30 minutes. May take longer depending on pan. Set timer for every 10 minutes to stir granola for even browning. Let cool in pan. **When completely cooled, stir in raisins.

Note: Can be stored in airtight container up to 1 month. Also freezes well. Enjoy!
